Vinification:
3 days of maceration during fermentation at T< 24°C, regular punching down the cap with light pumping over, use of indigenous yeast only, after pressing fermentation continues in stainless steel tanks, lees stirred regularly until the first decanting (January 2017)

Ageing:
1 year on fine lees in stainless steel tanks

Bottling / packaging:
0,75l bottle in cardboards of 6 bottles

About wine:
Rumena rebula is crystal clear wine with stronger shade of straw yellow colour, which shows its fullness and proper maturity. Light green nuances with their slightly sparkling appearance suggest the freshness and the fruit character of this wine. The scent is discreet, but broad. Citrus flavour reminds of its varietal character, while ripe pears and grassland herbs give us the willingness to drink. The taste is full, rich and cheerful with crisp acidity, which leave a fine mineral trace on the tongue in an elegant and durable after-taste. This is definitely nicely mellowed rebula, with good harmony in the prime of its life path.

Recommended:
as an aperitif goes well with savory pastries, oysters, cold seafood starters (marinated anchovies), compound fruit-vegetable salads, young cottage cheese, vegetable soups, steamed sweetwater fish, delicate marine fish (sole meunière), pasta or risotto with basil, pizza margarita, when meeting a friend... Serve at 12°C.
