5 days of maceration during fermentation at T< 24°C, regular punching down the cap with light pumping over, use of indigenous yeast only, fermentation ends in stainless steel tanks, followed immediately by the first decanting, malo-lactic fermentation completed

1 year on fine lees in stainless steel tanks

About wine:
Cabernet Sauvignon is intense coloured wine with deep ruby red colour, with its clear and bright limpidity. Immediately at the first nose it is flawless and full. Herb scents prevail over fruit ones, the most you can feel is pepper, sweet green pepper and coffee beans. In the background the fruit varietal note of dark berries play with the mineral trace of the specific local soil. Its fresh, slightly exotic taste in your mouth, with plenty of tannins acts ascendantly and cheerfully. Its unsoothing piquant character is beautifully interlaced with the gentle balm of long after-taste.
Recommended:
with smoked meat, grilled dishes, meat dishes with a rich buttery sauce or mushrooms, venison, duck, baked capon with buckwheat, tuna in pepper sauce, lamb or cabrito with bitter vegetables (chicory, winter chicory), oily flesh (cheek, Peritoneum), offal (tripe), mature hard cow and goat cheese. Serve at 17°C.
