quick pressing, fermentation at T< 18°C, use of indigenous yeast only

Ageing:
in April 2014 we've started the re-fermentation in bottle, using the classic champagne yeast

Recommended:
will be with oysters, sushi, sashimi, kaviar, lobster, plum with a hard cheese and olive oil ... We'll served it at 4°C.
